Restaurant Manager Simon Lam

Originally from Hong Kong, Restaurant Manager Simon Lam has worked in five star operations such as Furama, Peninsula and the Holiday Inn Hotel.

Simon became Manager of Mings restaurant at Crown in 1995, where his enthusiasm, personalised service and penchant for the authenticity of both cuisine and service ensured that customers kept returning for the ultimate Cantonese dining experience.

Appointed as Restaurant Manager in Silks in March 2004, Simon brings his experience, knowledge and love of Cantonese cuisine to one of Melbourne's finest Chinese restaurants.
